How to make and store socca?

If you haven't had the opportunity to taste socca, this article is for you!

Socca is a southern specialty made from chickpea flour. It is vegan and gluten-free. It is most often consumed on the go, outdoors and allows you to share a moment of conviviality or simply indulgence. What if making socca at home was possible?

SoccApéro® was created to be able to make socca at home simply and quickly. You will just need to add oil, water and a good dose of energy to shake it all up.

There are then two ways to cook socca:

In the pan

You can cook it in a pan with a little olive oil. The socca should not be too thin or too thick, you need to find the right balance to avoid your socca looking like a pancake or an omelette...

Heat your stove. Once it is hot, add a good drizzle of olive oil and pour the mixture, distributing it evenly. Cook over medium-high heat for 2 minutes on each side, remembering to turn it over or sauté it! The consistency of the socca should be soft on the inside and crispy on the outside. The batter should be similar to pancake batter without ever being too thin.

In the oven

You can also cook the socca in the oven and for this method there is no need to turn it! Preheat the oven to 210°. Place the copper dish in the oven and brush with olive oil for a few minutes. Once hot, take it out and pour in the SoccApéro® preparation, distributing it well. Bake at 210°C for 10 minutes.

Remove it from the oven when it is golden brown on the sides. Be careful, it’s hot! Cut it directly on the baking sheet, in traditional Nice fashion or into simple squares.

Conservation

You have to eat it hot to get the traditional goodness. But we are not going against recommending lukewarm tasting, but certainly not cold from the fridge!!

If your eyes were bigger than your stomach, no problem! You can keep the rest of the socca in the refrigerator for a few days, however it should not be stored for more than 2 days. Cover it with cling film and reheat in the oven for a few minutes.
